We've been using another product for email newsletters for the past year (I know, I know, we're moving to MailChimp very soon, I promise!), and one feature of this product has been to keep a list of users who unsubscribed. Is it possible to import this list into MailChimp so that all users who unsubscribe, past or future, are treated in the same manner (most importantly, returned with status of unsubscribed in API queries)? I know I could import them all and then unsubscribe each manually from the list members page, but as there are several hundred addresses here, I'd prefer to automate if possible. Is there any way to do this?

You can import them and then you can bulk unsubscribe by clicking Lists > Remove People and paste in all the email addresses.

This is what I did when moving from a previous provider.

Yes, as Andy mentioned this is very easy to do. You can import the unsub list by 'adding/import' and then you just bulk unsub the email addresses. MailChimp has made the import feature so much nicer in the last version!
